Ingredients:

2 cups fresh broccoli florets (steamed and finely chopped)

¾ cup breadcrumbs (panko or regular)

2 large eggs

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper

½ teaspoon smoked paprika (optional)

½ teaspoon dried oregano or Italian seasoning

1 tablespoon olive oil  (for extra crispiness, optional)

Instructions:

1. Prepare the Broccoli:

Steam the broccoli florets for about 5 minutes until tender.

Drain well and finely chop or pulse in a food processor.

2. Mix the Ingredients:

In a large bowl, combine the chopped broccoli, cheddar cheese, Parmesan, breadcrumbs, eggs, garlic powder, onion powder, salt, pepper, paprika, and dried herbs.

Stir until well combined. The mixture should hold together when pressed.

3. Shape the Bites:

Scoop about a tablespoon of the mixture and form it into small bite-sized balls or flattened patties.

Place them on a lined baking sheet.

4. Cook the Bites:

Oven Method:

Preheat oven to 400°F (200°C).

Lightly brush the bites with olive oil

Bake for 18-22 minutes, flipping halfway, until golden brown and crispy.

Air Fryer Method:

Preheat the air fryer to 375°F (190°C).

Place the bites in a single layer in the basket.

Air fry for 10-12 minutes, shaking halfway, until crispy.
