Air-Fried Vegetables:

  1. two cups of sweet potatoes, diced
  2. two cups of wedge-shaped white potatoes
  3. Cut a half head of cauliflower into florets.
  4. 3 tablespoons oil divided by 2 tablespoons cajun seasoning

Sweet Tahini Sauce:

  1. Four tsp creamy tahini
  2. three tablespoons of lemon juice
  3. One teaspoon of dijon mustard
  4. One teaspoon plus a sprinkle of pepper and salt
  5. one minced garlic clove
  6. Six tablespoons warm water

Bowl:

  1. Mixed greens (amount to taste; I use a couple of handfuls each bowl)
  2. One shredded carrot
  3. One-fourth cup of sliced green onions
  4. To serve, fresh lemon

 

Directions:

  1. Sweet potatoes, potato wedges, cauliflower, oil, and cajun seasoning should all be combined in a sizable mixing dish. Add to air fryer basket after tossing to mix.
  2. Preheat the air fryer to 375 degrees Fahrenheit. Cook, stirring, for 20 minutes.
  3. Mix all the ingredients for the tahini sauce in a small bowl until well combined. To get the right consistency, you can add water a little bit at a time as needed.
  4. To assemble the bowls, fill each one with the amount of greens you wish. Distribute the cooked vegetables and shredded carrot among the bowls. Add a green onion on top and cover with sauce. Include the protein as well, if using one. Have fun!
