Ingredients
Brie
1 wheel brie (200–250 g), chilled well
Freshly cracked black pepper
Coating
½ cup all-purpose flour
2 eggs, beaten
1 cup breadcrumbs or panko
¼ cup finely grated parmesan
Frying
Neutral oil (sunflower or canola)
Optional Finish
Honey or hot honey
Fresh thyme or rosemary
Cracked pink peppercorns
Instructions
1. Prepare the Brie
Cut brie into wedges or thick sticks.
Pat dry with paper towel.
Freeze for 20 minutes — this prevents leaking.
2. Coat
Roll brie in flour.
Dip in egg.
Coat in breadcrumbs + parmesan.
Repeat egg → breadcrumbs again for a strong seal.
Return to freezer for 10 minutes.
3. Fry
Heat oil to 170–175°C (340–350°F).
Fry brie pieces 1–2 at a time for 30–45 seconds per side.
Remove when deep golden and crisp.
Drain briefly on paper towel.
4. Finish
Sprinkle generously with freshly cracked black pepper
Drizzle lightly with honey
Add herbs if desired
Serve immediately while molten inside.
