2 eggs, beaten
1½ cups Italian-style breadcrumbs or panko

Instructions:
1. Cook Lasagna Noodles:
Boil noodles until al dente. Drain and lay flat on parchment or a greased tray to cool.
2. Make the Filling:
In a bowl, mix ricotta, mozzarella, Parmesan, egg, herbs, salt, and pepper.
Stir in cooked meat if using .
3. Assemble the Rolls:
Spread 1–2 tablespoons of ricotta filling on each lasagna noodle.
Add a small spoon of marinara over the filling.
Roll up tightly from the short end and place seam-side down.
4. Bread the Rolls:
Roll each lasagna roll in flour, then dip in beaten eggs, then coat in breadcrumbs.
