Ingredients

400g (about 1 lb) Brussels sprouts, trimmed and halved

2 tbsp olive oil

½ tsp salt

¼ tsp black pepper

2 tbsp balsamic vinegar

1 tbsp honey (or maple syrup for vegan)

1 tsp Dijon mustard (optional, adds depth)

1 garlic clove, minced

Optional garnish: chopped parsley, toasted almonds, or pomegranate seeds

Instructions

1. Preheat Oven

Preheat to 200°C (400°F).

Line a baking tray with parchment paper.

2. Prep the Brussels Sprouts

Toss halved Brussels sprouts with olive oil, salt, and pepper.

Spread cut-side down on the tray for maximum crispiness.

3. Roast

Roast for 20–22 minutes, shaking the tray halfway.

Brussels sprouts should be tender inside and slightly charred outside.

4. Make the Honey-Balsamic Glaze

1. In a small saucepan, combine balsamic vinegar, honey, Dijon (if using), and garlic.

2. Simmer on low heat 2–3 minutes until slightly thickened.

5. Toss & Finish

Drizzle glaze over roasted Brussels sprouts.

Toss gently to coat evenly.

Return to oven for 2–3 minutes to set the glaze.

6. Serve

Garnish with chopped parsley, toasted nuts, or pomegranate seeds for a Mediterranean touch.
