Crispy Parmesan Crusted Chicken with Garlic Herb Sauce

Ingredients:
For the Chicken:

  1. 4 boneless, skinless chicken breasts
  2. 1 cup grated Parmesan cheese
  3. 1 cup panko breadcrumbs
  4. 1 tsp garlic powder
  5. 1 tsp onion powder
  6. 1/2 tsp paprika
    Salt and pepper, to taste
  7. 2 large eggs
  8. 1/4 cup all-purpose flour
  9. 3 tbsp olive oil

For the Garlic Herb Sauce:

  1. 1/4 cup unsalted butter
  2. 4 cloves garlic, minced
  3. 1 tbsp fresh parsley, chopped
  4. 1 tbsp fresh basil, chopped (or 1 tsp dried)
  5. 1 tbsp lemon juice
  6. Salt and pepper, to taste

Instructions:

Prepare the Chicken:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Place the chicken breasts between two sheets of plastic wrap or parchment paper and pound them to an even thickness (about 1 inch).

Set Up Breading Stations:
In three shallow bowls, set up the breading stations:

First bowl:

Place the flour, seasoned with salt and pepper.
Second bowl: Beat the eggs.
Third bowl:

Combine the Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper.
Bread the Chicken:
Dredge each chicken breast in the flour, shaking off the excess. Dip it into the beaten eggs, allowing any excess to drip off, and then coat it in the Parmesan panko mixture, pressing gently to adhere.

Cook the Chicken:
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side, or until golden brown and cooked through (internal temperature of 165°F). You may need to do this in batches.
Transfer the cooked chicken to the prepared baking sheet and place in the oven to keep warm while you prepare the sauce.

Make the Garlic Herb Sauce:
In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and cook for 1-2 minutes until fragrant (be careful not to burn it).
Stir in the chopped parsley, basil, lemon juice, and season with salt and pepper to taste.

Serve:
Drizzle the garlic herb sauce over the crispy Parmesan crusted chicken and serve warm.
