Crispy Smashed Potatoes are golden, crunchy on the outside, and soft and fluffy on the inside. These potatoes are boiled until tender, smashed flat, and roasted to perfection with butter, garlic, and herbs. They’re an easy side dish that pairs well with steak, chicken, or fish and can be customized with your favorite toppings like cheese, sour cream, or bacon!

Ingredients

1 ½ lbs baby potatoes (Yukon Gold or red potatoes work best)

2 tablespoons salt (for boiling water)

3 tablespoons olive oil (or melted butter for extra flavor)

2 cloves garlic, minced (or ½ teaspoon garlic powder)

½ teaspoon salt (adjust to taste)

½ teaspoon black pepper

½ teaspoon paprika (optional, for extra color and flavor)

½ teaspoon dried thyme or rosemary (or 1 teaspoon fresh herbs, chopped)

¼ teaspoon red pepper flakes (optional, for a slight kick)

¼ cup grated Parmesan cheese (optional, for extra crispiness)

2 tablespoons fresh parsley or chives, chopped (for garnish)

Instructions

Step 1: Boil the Potatoes

1. Place whole baby potatoes in a large pot and cover with cold water. Add 2 tablespoons salt (this seasons the potatoes as they cook).

2. Bring to a boil, then reduce heat to medium and cook for 15-20 minutes, or until the potatoes are fork-tender.

3. Drain and let them sit for 5 minutes to remove excess moisture.

Step 2: Preheat & Prepare the Baking Sheet

4. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

Step 3: Smash the Potatoes

5. Place the boiled potatoes on the baking sheet, spacing them out.

6. Use a fork, potato masher, or the bottom of a glass to gently press down on each potato until about ½ inch thick.

Step 4: Season & Roast

7. In a small bowl, mix olive oil , garlic, salt, black pepper, paprika, thyme, and red pepper flakes.

8. Brush or drizzle this mixture evenly over the smashed potatoes.

9. Sprinkle grated Parmesan cheese on top if using.

Step 5: Bake Until Crispy

10. Roast in the oven for 20-25 minutes, or until the edges are golden brown and crispy.

11. Garnish with fresh parsley or chives and serve hot!
