Crispy Zucchini Garlic Bites

Golden and crisp zucchini bites coated in breadcrumbs, Parmesan, and garlic — baked (or air-fried) until crunchy. They’re addictive, healthy-ish, and pair perfectly with a yogurt dipping sauce or marinara.

Ingredients

2 medium zucchini, grated

½ tsp salt

½ cup breadcrumbs

⅓ cup Parmesan cheese, grated

2 garlic cloves, minced

1 egg, lightly beaten

2 tbsp fresh parsley, chopped

½ tsp dried oregano

¼ tsp black pepper

Olive oil spray (for baking/air-frying)

Instructions

Prep Zucchini

Grate zucchini and place in a colander.

Sprinkle with salt and let sit 10 minutes.

Squeeze out excess water using a clean towel.

Mix Batter

In a bowl, combine zucchini, breadcrumbs, Parmesan, garlic, egg, parsley, oregano, and pepper.

Mix until sticky and holds together (add more breadcrumbs if too wet).

Form Bites

Scoop tablespoon-sized portions and shape into small balls or patties.

Cook

Bake: Place on parchment-lined baking sheet, spray with olive oil, bake at 400°F (200°C) for 18–20 min, flipping halfway.

Air Fry: Place in air fryer basket, spray lightly, cook at 375°F (190°C) for 12–14 min until golden.

Serve

Enjoy hot with marinara, tzatziki, or garlic-yogurt dip.

Tips

Make them extra cheesy by adding mozzarella cubes inside before shaping.

For a gluten-free option, use almond flour or gluten-free breadcrumbs.

These freeze well! Bake straight from frozen for ~5 extra minutes.
