- 1 1/2 cups dried lentils, rinsed
- 1 medium onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 celery stalk, diced
- 6 cups vegetable broth (or chicken broth)
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 bay leaf
- Fresh parsley for garnish
Instructions For Delicious and Hearty Lentil Soup
- To sauté the vegetables, place a large saucepan over medium heat with olive oil. Add the chopped celery, carrots, onion, and garlic. The veggies should soften after around five minutes of sautéing.
- Add the spices and lentils: Add the diced tomatoes, cumin, smoked paprika, bay leaf, and lentils. Add pepper and salt for seasoning. Simmer for a further two to three minutes to let the flavours meld.
- After adding the vegetable broth, raise the heat to a boil, and then lower it to a simmer. The lentils should be soft after 30 to 40 minutes of simmering under cover.
- Modify the seasoning: If necessary, taste the soup and adjust the seasoning. Take out the bay leaf.
- Serve the soup by ladling it into dishes and adding some fresh parsley as a garnish. For a filling supper, serve with crusty bread on the side.
