Ingredients:
* ¼ cup olive oil
* 1 medium onion, diced
* 1 teaspoon Old Bay seasoning
* ¼ teaspoon thyme
* 2 medium potatoes, diced
* 2 cups corn (fresh, frozen, or canned)
* 4 cups seafood stock (or fish stock)
* 1 cup heavy cream (or half-and-half)
* 1 pound mixed seafood (such as shrimp, scallops, and white fish)
* Salt and pepper to taste

Instructions:
