Ingredients
For the Salmon
2 large salmon fillets, skin removed (about 400–450 g total)
1 tbsp olive oil
½ tsp salt
¼ tsp black pepper
Zest of ½ lemon
For the Spinach-Feta Filling
1 cup fresh spinach, finely chopped
½ cup feta cheese, crumbled
¼ cup cream cheese, softened
1 clove garlic, minced
1 tbsp lemon juice
1 tbsp fresh dill or parsley, finely chopped
¼ tsp black pepper
Instructions
1. Prepare the Filling
In a bowl, mix cream cheese, feta, lemon juice, garlic, herbs, and black pepper.
Fold in chopped spinach until evenly combined.
2. Prepare the Salmon
Preheat oven to 190°C (375°F).
Place salmon fillets between parchment and gently pound or slice horizontally to create thin, even sheets.
Season salmon with salt, pepper, lemon zest, and olive oil.
3. Assemble the Pinwheels
Spread spinach-feta mixture evenly over the salmon.
Roll tightly from the long side to form a log.
Slice into 2–3 cm thick pinwheels.
Secure with toothpicks if needed.
4. Bake
Arrange pinwheels cut-side up on a lined baking tray.
Bake for 15–18 minutes, until salmon is just cooked through and flaky.
