Total: 35 minutes

Serves: 2–3

Ingredients

For the Tempeh:

250 g tempeh, sliced into cubes or strips

2 tbsp olive oil

2 tbsp cornstarch

For the Veggies:

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 medium carrot, julienned

1 cup broccoli florets

1 small zucchini, sliced

2 cloves garlic, minced

Sweet Chilli Sauce:

¼ cup sweet chilli sauce

2 tbsp soy sauce

1 tbsp honey or maple syrup

1 tbsp rice vinegar or lemon juice

1 tsp sesame oil

2 tbsp water

Garnish:

Sesame seeds

Fresh coriander or spring onions

Instructions

1. Prepare the Tempeh

Steam tempeh for 5 minutes (optional but recommended to remove bitterness).

Toss tempeh with cornstarch until lightly coated.

2. Crisp the Tempeh

Heat olive oil in a pan over medium heat.

Add tempeh and pan-fry until golden and crispy on all sides (8–10 minutes).

Remove and set aside.

3. Cook the Veggies

In the same pan, add garlic and saute for 30 seconds.

Add vegetables and stir-fry for 4–5 minutes until tender but crisp.

4. Make the Sauce

Whisk sweet chilli sauce, soy sauce, honey, vinegar, sesame oil, and water.

Pour into the pan with veggies.

5. Combine

Add crispy tempeh back to the pan.

Toss gently and cook for 2–3 minutes until everything is glossy and coated.

Notes

Use mild sweet chilli sauce for zero heat.

Tempeh absorbs flavor best when crispy first.

Add a splash of water if sauce thickens too much.

Tips

Serve over steamed rice, quinoa, or noodles.

Add cashews or peanuts for crunch.

Works beautifully as a meal-prep dish (keeps 3 days in fridge).
