This easy sheet-pan sweet potato, cauliflower & lentil bowl is a quick, nutritious, and budget-friendly meal. 🧺 Ingredients 

Sheet-Pan Base

1 medium sweet potato, peeled & cubed small

2 cups cauliflower florets

1 cup cooked lentils (canned or boiled, drained)

2 tbsp olive oil

½ tsp garlic powder

½ tsp paprika (mild)

¼ tsp cumin (optional)

Salt & black pepper, to taste

Optional Toppings

Greek yogurt or tahini drizzle

Lemon juice

Fresh parsley or cilantro

1️⃣ Heat oven to 200°C (400°F).

2️⃣ Add everything (sweet potato, cauliflower, lentils, oil, spices, salt & pepper) to a sheet pan.

3️⃣ Toss well and spread evenly.

4️⃣ Roast for 25 minutes, flipping once halfway.

5️⃣ Serve warm with yogurt or tahini and a squeeze of lemon.
