Easy Air Fryer Salmon Bites with Lemon Butter and Dil

I’ve found that cooking salmon in an air fryer is the easiest way to prepare protein for a quick weeknight meal. After just 12 to 14 minutes, you’re done! You can top this dinner dish with fresh broccoli, spinach or rocket, which is why I adore it. Roasted, crunchy, creamy dill potatoes with a light coating!

Ingredients Easy Air Fryer Salmon Bites with Lemon Butter and Dill Potatoes

Salmon”

  1. Two fillets of salmon
  2. One tablespoon of olive oil
  3. 1 tablespoon your preferred spice blend

Sauce:

  1. one minced shallot
  2. 4–6 tablespoons chilled butter
  3. 1/4 cup chicken broth or white wine
  4. two teaspoons of lemon juice

Sweet potatoes:

  1. One and a half cups of sliced fingerling or little roasting potatoes
  2. One tablespoon of olive oil
  3. Half a tablespoon sour cream
  4. One teaspoon of lemon juice
  5. One teaspoon freshly minced dill
  6. Two fillets of salmon
  7. One tablespoon of olive oil
  8. 1 tablespoon your preferred spice blend

Instructions For Easy Air Fryer Salmon Bites with Lemon Butter and Dill Potatoes

  1. Peel the fish fillet first. Your fillet should be cut into 1-inch cubes. Use your preferred seasoning and a light spray of olive oil! Air fried for 12–14 minutes at 390°F.
  2. Mince your shallot and gently sauté it with 1 tablespoon of butter to make your sauce. After it becomes transparent, mix in the lemon juice and wine or broth. Reduce by half by simmering. Next, remove from the fire and stir in 4–6 tablespoons of chilled butter. This will make the sauce thicker! Take off the heat and place aside.
  3. Halve your roasting potatoes and season with salt, pepper and a drizzle of oil. Then roast at 475 for about 12-15 minutes. Once cooked, toss in your sour cream, lemon and dill. Serve all together.
  4. Optional salad greens or broccoli can be added!
