Ingredients
2 cups cooked chicken, shredded or diced
1 cup cooked rice (white or brown)
¾ cup black beans or kidney beans, drained & rinsed
1 cup shredded mozzarella or cheddar
½ cup mild salsa or tomato sauce
1 tsp cumin
½ tsp paprika
½ tsp garlic powder
Salt & black pepper, to taste
6 large flour tortillas
1 tbsp olive oil
Optional (mild add-ins):
Sweet corn
Sauteed onions or bell peppers
Chopped coriander
Instructions
1. Prepare Filling
Preheat oven to 190°C (375°F).
In a large bowl, mix chicken, rice, beans, salsa, spices, and half the cheese.
Taste and adjust seasoning.
2. Assemble Burritos
Warm tortillas slightly so they don’t tear.
Spoon filling into the center of each tortilla.
Fold sides in and roll tightly.
Place seam-side down in a greased baking dish.
3. Bake
Brush tops lightly with olive oil or butter.
Sprinkle remaining cheese over burritos.
Cover loosely with foil and bake 15 minutes.
Uncover and bake 5 more minutes until cheese melts and tops are lightly golden.
