1 medium head cauliflower, cut into florets
1 tbsp olive oil
Salt, to taste
¼ tsp black pepper
Cheese Sauce
1 cup milk
1 tbsp butter
1 tbsp all-purpose flour
¾ cup grated cheddar or mozzarella
2 tbsp grated parmesan (optional, for topping)
¼ tsp garlic powder (optional)
½ tsp dried oregano or Italian herbs

1. Pre-cook cauliflower
Boil or steam cauliflower for 5–6 minutes until just tender.
Drain well and place in a lightly greased baking dish.
2. Make the cheese sauce
In a pan, melt butter over low heatm
