Chicken mixture

  1. 1 cup chopped red bell pepper
  2. 1 cup diced onion
  3. 1 cup diced or quartered mushrooms, depending on size
  4. A quarter of a cup of frozen peas
  5. Three cups of cooked, shredded chicken

Sauce

  1. two tablespoons of butter
  2. two cups of milk
  3. two to three tablespoons of corn flour
  4. one hundred fifty millilitres of single cream

Other

  1. two tablespoons of olive oil
  2. salt and pepper to taste

Directions:

  1. Warm up the olive oil in a pan.
    Two teaspoons of olive oil
  2. Saute the red pepper and onions together until they get tender. (Roughly five minutes)

  3. When the mushrooms are tender, add them and simmer for a further five minutes.

  4. After adding and allowing the butter to melt, mix in the cornflour.

  5. After adding the milk, heat until it boils. Once the mixture thickens, reduce the heat and continue stirring.

  6. After adding the chicken and peas, simmer for five minutes.

  7. Add the cream and let it warm through.

  8. Add optional salt and pepper for seasoning.
    To taste, add salt and pepper.
  9. Present the dish over a bed of rice, accompanied by a crisp, green salad.

Notes:

  • Keep the veggies from browning; brown veggies produce dark sauce, and we want the sauce to be beautiful and white.
  • To make the sauce thicker, add more until a spoon leaves a trace after being dragged through it. Should the sauce not thicken enough, combine an additional teaspoon of cornflour with a little amount of extra milk and whisk it into the sauce until the appropriate consistency is achieved.
  • Seasoning: Check for seasoning and adjust to your personal taste, just like with any recipe.

Quick and easy way to poach fresh raw chicken breasts:

Put the chicken breasts in a saucepan with a teaspoon of salt and, if available, a few black peppercorns. Simply add a fair pinch of freshly ground black pepper if you don’t have whole black peppercorns.
Bring the chicken to a boil, cover with a lid, and add just enough water to cover it.
