Ingredients
  1. 8 oz (225 g) dried chow mein noodles (or spaghetti)

  3. 1 lb boneless, skinless chicken breast or thighs, sliced thin (450 g)
  4. 2 cups shredded green cabbage (150 g)
  5. 1 cup shredded carrots (110 g)
  6. 1/2 cup sliced bell pepper (any color, 75 g)
  7. 3 cloves garlic, minced
  8. 2 teaspoons fresh ginger, minced (10 g)
  9. 1/4 cup soy sauce (60 ml)
  10. 2 tablespoons oyster sauce (30 ml)
  11. 1 tablespoon hoisin sauce (15 ml)
  12. 1 teaspoon sesame oil (5 ml)
  13. 1/4 cup chicken broth (60 ml)
  14. 2 green onions sliced, for garnish
  15. Sesame seeds, for garnish (optional)

Instructions

Cook the Noodles:
Bring a large pot of water to a boil. Cook 8 oz chow mein noodles according to package instructions.
Drain, rinse with cold water, and set aside.
Cook the Chicken:
Heat 1 tablespoon oil in a large skillet or wok over medium-high heat.
Add the 1 lb sliced chicken, season with salt and pepper, and cook for 5-6 minutes or until golden and fully cooked.
Remove the chicken from the pan and set aside.
Cook the Vegetables:
In the same skillet, heat the remaining 1 tablespoon vegetable oil.
Add 2 cups shredded cabbage, 1 cup shredded carrots, 1/2 cup sliced bell pepper, 3 minced garlic cloves, and 2 teaspoons minced ginger.
Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
Prepare the Sauce:
In a small bowl, mix together 1/4 cup soy sauce, 2 tablespoons oyster sauce, 1 tablespoon hoisin sauce, 1 teaspoon sesame oil, and 1/4 cup chicken broth.
Combine Everything:
Return the cooked chicken to the skillet.
Add the drained noodles and pour the sauce over the top.
Toss everything together and cook for another 2-3 minutes, ensuring the noodles are well coated and heated through.
Garnish and Serve:
Sprinkle with sliced green onions and sesame seeds if desired.
