Easy Chicken Couscous Salad

A refreshing bowl of fluffy couscous, juicy seasoned chicken, crunchy veggies, and a zesty lemon-herb dressing.
It’s fast, healthy, and full of flavor.

Ingredients 

For the Chicken

1 large chicken breast, sliced or cubed

1 tbsp olive oil

1 tsp garlic powder

1 tsp paprika

½ tsp black pepper

½ tsp salt

½ tsp dried oregano

For the Couscous

1 cup couscous

1 cup boiling water

1 tbsp olive oil

Pinch of salt

Veggies & Add-Ins

½ cucumber, diced

1 small red onion or 2 tbsp green onion

1 small red bell pepper, diced

½ cup cherry tomatoes, halved

¼ cup chopped parsley or mint

Feta cheese

Zesty Lemon Dressing

2 tbsp olive oil

Juice of 1 lemon

1 tsp honey

½ tsp salt

½ tsp black pepper

½ tsp dried oregano

Instructions 

1. Cook the Couscous

Add couscous to a bowl.

Pour 1 cup boiling water over it.

Add a pinch of salt + 1 tbsp olive oil.

Cover for 5 minutes.

Fluff gently with a fork.

2. Cook the Chicken

Mix chicken with olive oil, garlic powder, paprika, pepper, salt, and oregano.

Heat a pan and cook 5–7 minutes until golden and cooked through.

Set aside.

3. Prepare the Dressing

Whisk olive oil, lemon juice, honey, salt, pepper, and oregano.

4. Assemble the Salad

Add couscous to a bowl.

Add cucumber, tomatoes, bell pepper, onion, and herbs.

Add the cooked chicken.

Pour the dressing over everything.

Toss gently.

Add feta if you like.

NOTES

Use leftover rotisserie chicken to make it even faster.

Add chickpeas for extra protein.

Add olives or avocado for more Mediterranean flavor.

Serve warm OR cold — both taste great.
