½ yellow bell pepper, sliced

½ red onion, sliced

1 small zucchini, sliced (optional)

6 small tortillas (flour, corn, or whole wheat)

1 avocado, sliced or mashed

2 tbsp Greek yogurt or sour cream

Fresh cilantro or parsley, chopped

Instructions

Step 1: Cook the Chicken

1. In a bowl, toss chicken with olive oil, garlic, paprika, cumin, chili flakes, salt, pepper, and lime juice.

2. Heat a skillet over medium heat and cook chicken for 6–7 minutes, stirring occasionally until golden and cooked through.

3. Remove from the pan and set aside.

Step 2: Sauté the Veggies

1. In the same skillet, add olive oil, then toss in bell peppers, onion, and zucchini.

2. Sauté for 4–5 minutes, until softened but still slightly crisp.

3. Season with a little salt and pepper.

Step 3: Assemble the Tacos

1. Warm tortillas on a dry skillet or directly over the flame for a few seconds.
