Ingredients
Quinoa
1 cup quinoa (uncooked)
2 cups water or vegetable broth
Pinch salt
Roasted Vegetables
1 cup broccoli
1 bell pepper, chopped
1 zucchini, sliced
1 carrot, sliced
½ red onion
2 tbsp olive oil
Salt and pepper
Dressing
2 tbsp olive oil
1 tbsp lemon juice

Instructions

Roast for 20–25 minutes until tender and slightly caramelized.

Whisk together olive oil, lemon juice, honey, garlic powder, salt, and pepper.
