Ingredients

Quinoa

1 cup quinoa (uncooked)

2 cups water or vegetable broth

Pinch salt

Roasted Vegetables

1 cup broccoli

1 bell pepper, chopped

1 zucchini, sliced

1 carrot, sliced

½ red onion

2 tbsp olive oil

Salt and pepper

Dressing

2 tbsp olive oil

1 tbsp lemon juice

1 tsp Honey (or maple syrup for vegan)
