Espinaca Dip (Creamy Spinach Dip)

Espinaca Dip is a creamy, cheesy spinach dip with a Spanish-Mexican twist, perfect for dipping tortilla chips, veggies, or crackers. Made with spinach, cream cheese, melted cheese, and flavorful spices, it’s rich, comforting, and perfect for parties or gatherings. Serve it warm and gooey for the best experience!

Ingredients

2 tablespoons olive oil

½ small onion, finely chopped

2 cloves garlic, minced

1 small jalapeno, finely diced (optional, for spice)

10 oz fresh spinach, chopped (or 1 package frozen spinach, thawed and drained)

4 oz cream cheese, softened

½ cup sour cream

½ cup heavy cream (or milk for a lighter version)

1 cup shredded Monterey Jack cheese (or Mexican blend)

½ cup shredded white cheddar (or mozzarella)

½ teaspoon smoked paprika

½ teaspoon cumin

Salt & black pepper to taste

¼ cup diced tomatoes (or drained Rotel for extra flavor)

¼ cup chopped cilantro (optional, for garnish)

Instructions

1. Saute the Aromatics:

1. In a medium saucepan or skillet,put olive oil over medium heat.

2. Add onion, garlic, and jalapeno and saute for 2-3 minutes until softened.

2. Cook the Spinach:

1. Add chopped spinach to the pan and cook until wilted (about 2 minutes for fresh spinach). If using frozen spinach, stir until heated through.

3. Make the Creamy Base:

1. Reduce heat to low and stir in cream cheese, mixing until melted and smooth.

2. Add sour cream, heavy cream, smoked paprika, cumin, salt, and pepper, stirring well.

4. Melt the Cheese:

1. Gradually stir in Monterey Jack and white cheddar, mixing until fully melted and combined.

2. Fold in diced tomatoes for extra flavor

5. Serve & Garnish:

1. Transfer to a serving dish or small cast iron skillet.

2. Garnish with chopped cilantro (optional).

3. Serve warm with tortilla chips, pita bread, or fresh veggies.
