Ingredients
2 large ripe avocados, diced
1 cup cherry tomatoes, halved
1 small cucumber, diced
¼ cup red onion, thinly sliced
2 tbsp fresh parsley or cilantro, chopped
3 tbsp extra virgin olive oil
1 tbsp fresh lemon juice
½ tsp sea salt
¼ tsp black pepper
Instructions
1. Prepare the Veggies
In a salad bowl, combine avocado, cherry tomatoes, cucumber, red onion, and parsley.
2. Make the Dressing
In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
3. Toss & Serve
Gently toss salad with dressing.
Serve immediately alongside Feta Shakshuka.
