Ingredients:

For the Peppers:

8–10 mini sweet peppers (or 4 small bell peppers), halved and deseeded

1 tbsp olive oil

Pinch of salt and pepper

For the Feta Filling:

3/4 cup crumbled feta cheese

1/4 cup cream cheese (softened, or use Greek yogurt for lighter version)

1 tbsp lemon juice

1 tsp lemon zest

1 garlic clove, finely minced

1 tbsp fresh parsley, chopped (or 1 tsp dried)

1 tbsp fresh dill or mint

Black pepper, to taste

Chili flakes

Instructions:

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare peppers:
Halve and deseed the peppers. Lightly coat with olive oil and sprinkle with a bit of salt and pepper. Arrange cut-side up on the baking sheet.

Make the filling:
In a bowl, mix together feta, cream cheese (or Greek yogurt), lemon juice, zest, garlic, herbs, and a pinch of pepper. Mash and stir until creamy. Add chili flakes if using.

Stuff the peppers:
Spoon or pipe the feta filling into each pepper half.

Bake:
Roast for 18–20 minutes, or until peppers are tender and the tops start to turn golden.

Serve warm or at room temperature. Garnish with extra herbs, a drizzle of olive oil, or a sprinkle of paprika.

Air Fryer option: Air fry at 375°F (190°C) for about 10–12 minutes.
