This Fiesta Lime Chicken is juicy, zesty, and packed with bright citrus flavor. Ingredients

Lime Chicken

4 boneless skinless chicken breasts

3 tablespoons olive oil

Zest & juice of 2 limes

3 cloves garlic, minced

1 teaspoon honey

1 teaspoon ground cumin

½ teaspoon paprika

Salt & black pepper to taste

Cilantro Lime Salsa

1 cup cherry tomatoes, finely chopped

¼ cup red onion, finely diced

¼ cup fresh cilantro, chopped

Juice of 1 lime

1 tablespoon olive oil

Salt to taste

Instructions

1. Marinate the Chicken

Whisk olive oil, lime zest, lime juice, garlic, honey, cumin, paprika, salt, and pepper.

Coat chicken well and marinate at least 20 minutes (up to overnight).

2. Cook the Chicken

Grill: Medium heat, 5–6 minutes per side

Pan-sear: Medium-high heat, 6–7 minutes per side
Cook until golden and internal temp reaches 74°C / 165°F.

3. Make the Salsa

Mix tomatoes, red onion, cilantro, lime juice, olive oil, and salt in a bowl.

Chill 5–10 minutes for best flavor.

4. Serve

Rest chicken 5 minutes.

Spoon cilantro lime salsa generously over the top.

Tips for Best Results

Pound chicken slightly for even cooking.

Add avocado cubes to the salsa for creaminess.

Serve with rice, grilled veggies, or in tacos.
