Ingredients:

  1. 1 package (8.8 ounces) Thai Vermicelli rice noodles
  2. 2 tablespoons olive oil
  3.  1 pound beef, sliced into bite-sized pieces
  4.  1 yellow onion, diced
  5.  6 cloves garlic, minced
  6.  2 tablespoons soy sauc
  7.  1 cup chicken stock
  8.  2 cups shredded cabbage
  9.  1/2 cup sliced carrots
  10.  3 green onions, diced
  11.  Kosher salt and cracked pepper, to taste

Instructions:
1. Soak the rice noodles according to the package directions.
2. Slice the beef into bite-sized pieces and dice the vegetables.
3. Heat the olive oil in a wok or large sauté pan over medium-high heat.
4. Add the beef, diced yellow onion, minced garlic, and soy sauce to the pan.
5. Cook for 3-5 minutes until the beef is browned.
6. Season with salt and pepper to taste.
7. Pour in the chicken stock, then add the shredded cabbage, sliced carrots, and diced green onions.
8. Cook for another 3-5 minutes until the vegetables have softened.
9. Add the soaked noodles to the beef and vegetable mixture.
10. Toss everything together to combine well.
