Main Ingredients:
500 g (1 lb) fresh white fish (e.g., cod, tilapia, or haddock), cut into bite-sized pieces
400 ml (13.5 oz) coconut milk
2 limes, juice and zest
3 cloves garlic, finely chopped
2 cm (1 inch) piece of fresh ginger, grated
2 cups vegetable or fish stock
1 small onion, diced
1-2 red chilies, finely sliced (optional, for heat)
1 tbsp fish sauce
1 tbsp olive oil or coconut oil
Salt and pepper, to taste
For Garnish:
cilantro or parsley, chopped
Thinly sliced green onions

1. Prepare the ingredients:
Zest and juice the limes. Set the zest and juice aside separately.
Finely chop the garlic, dice the onion, and slice the red chilies (if using). Grate the fresh ginger.
2. Cook the base:
Heat the olive oil (or coconut oil) in a large pot over medium heat. Add the diced onion and cook for 2-3 minutes until softened.
Add the garlic and grated ginger to the pot. Sauté for another 1-2 minutes until fragrant.
If you’re using red chilies, add them now and sauté for another minute.
3. Add the liquids:
Pour in the vegetable or fish stock and bring it to a simmer.
Stir in the coconut milk, lime juice, and lime zest. Season with fish sauce, salt, and pepper. Let the soup simmer gently for 5-7 minutes to allow the flavors to meld together.
4. Add the fish:
Add the fish pieces to the soup and cook for about 5-7 minutes or until the fish is cooked through and flakes easily with a fork.
5. Final taste check:
Taste the soup and adjust seasoning, adding more salt, pepper, or lime juice if needed.
6. Serve:
Ladle the soup into bowls and garnish with fresh cilantro (or parsley), thinly sliced green onions, and a wedge of lime on the side for extra zest.
