Soft flatbread rolled with creamy spread, fresh veggies, and herbs, then sliced into bite-sized pinwheels. These are colorful, flavorful, and easy to make ahead — perfect for lunchboxes, parties, or light snacks.

 Ingredients

For the Spread

½ cup cream cheese (softened) or Greek yogurt for lighter version

2 tbsp hummus

1 tsp lemon juice

1 tsp olive oil

½ tsp garlic powder

Salt & pepper to taste

For the Filling

1 small cucumber, finely diced

½ red bell pepper, finely diced

¼ cup black olives, sliced

2 tbsp sun-dried tomatoes, chopped

2 tbsp fresh parsley or cilantro, chopped

¼ cup feta cheese, crumbled

For Rolling

2 large soft flatbreads (tortilla, lavash, or naan)

 Instructions

1. Make the Spread

In a bowl, mix cream cheese (or Greek yogurt), hummus, lemon juice, olive oil, garlic powder, salt, and pepper until smooth.

Taste and adjust seasoning.

2. Prepare the Filling

Dice cucumber, bell pepper, olives, sun-dried tomatoes, and chop parsley.

Mix gently with crumbled feta (if using).

3. Assemble the Pinwheels

Lay one flatbread on a clean surface.

Spread half of the creamy mixture evenly over the flatbread, leaving a small ½-inch border around edges.

Evenly sprinkle half of the veggie filling over the spread.

Roll the flatbread tightly into a log, starting from one edge.

Repeat with second flatbread and remaining ingredients.

4. Chill and Slice

Wrap each log in plastic wrap and chill in the fridge for 15 minutes to firm up.

Slice each log into 1-inch pinwheels.

Arrange on a platter and serve.
