4 large whole-wheat or regular tortillas
1 ½ cups shredded mozzarella or a mozzarella–feta mix
½ cup crumbled feta cheese

Instructions
1. Prepare the Filling
Heat olive oil in a skillet over medium heat.
Add bell pepper, zucchini, and red onion. Saute 4–5 minutes until softened.
Stir in spinach, olives, sun-dried tomatoes, oregano, garlic powder, salt, and pepper. Cook another 1–2 minutes until spinach wilts. Remove from heat.
2. Assemble the Quesadillas
Place one tortilla on a clean surface.
Sprinkle a thin layer of mozzarella, then add some vegetable filling, then top with feta and more mozzarella.
Cover with a second tortilla.
Repeat with remaining tortillas.
3. Cook the Quesadillas
Heat a large skillet or griddle over medium heat.
Lightly brush with olive oil.
Cook each quesadilla for 3–4 minutes per side until golden brown and cheese is melted.
Transfer to a cutting board and slice into wedges.
4. Serve
Serve warm with tzatziki, hummus, or Greek yogurt dip on the side.
