Garlic Herb Sautéed Mushrooms and Zucchini

Ingredients
2 medium zucchini, halved lengthwise & sliced into half-moons
8 oz (225g) mushrooms (button, cremini, or mixed), sliced
3 tbsp extra virgin olive oil
3 garlic cloves, minced
1 tsp dried oregano (or Italian seasoning)
2 tbsp fresh parsley or basil, chopped
1 tbsp lemon juice + zest (optional, for brightness)
Salt & freshly ground black pepper, to taste
Pinch of red pepper flakes (optional, for a little kick)
Instructions
1. Prep the Veggies
Slice zucchini into half-moons and mushrooms into even slices so they cook uniformly.
2. Cook the Mushrooms
1. Heat 2 tbsp olive oil in a large skillet over medium-high heat.
2. Add mushrooms, spread them out, and let cook without stirring for 3–4 minutes to get golden edges.
3. Stir and cook another 2–3 minutes until softened. Remove from pan and set aside.
3. Cook the Zucchini
1. Add 1 tbsp more olive oil to the skillet.
2. Add zucchini slices, season with salt, pepper, and oregano.
3. Sauté for 4–5 minutes until tender-crisp and lightly browned.
4. Combine & Finish
1. Return mushrooms to skillet, add garlic, and cook 1–2 minutes until fragrant.
2. Toss with fresh herbs and lemon juice/zest.
3. Adjust seasoning, then serve warm.
To Serve
As a side dish with grilled chicken, salmon, or steak.
Toss into a pasta dish or grain bowl.
