Garlic Mushroom & Spinach Pasta

Ingredients:

  1. 12 oz rotini pasta (or pasta of choice)
  2. 2 tbsp olive oil
  3. 3 cloves garlic, minced
  4. 10 oz mushrooms, sliced (button or cremini)
  5. 2 cups fresh spinach leaves
  6. 1/2 tsp dried thyme
  7. Salt and pepper, to taste
  8. Freshly grated Parmesan cheese, for garnish
  9. Fresh parsley, chopped (optional for garnish)

Directions:

Cook Pasta: In a large pot of salted boiling water, cook pasta according to package instructions. Drain and set aside.
Sauté Garlic & Mushrooms: In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute. Add mushrooms, season with thyme, salt, and pepper, and cook until mushrooms are golden and tender, about 5-7 minutes.
Add Spinach: Add spinach to the skillet and cook until just wilted, about 1-2 minutes.
Combine with Pasta: Add the cooked pasta to the skillet, toss everything together, and adjust seasoning if needed.
Serve: Serve warm, topped with freshly grated Parmesan and chopped parsley for extra flavor.
