Ingredients

Salad Base

2 cups mixed greens (spinach, arugula, kale)

½ cup cherry tomatoes, halved

½ cucumber, sliced or diced

¼ red onion, thinly sliced

¼ cup grated carrot

2–3 radishes, thinly sliced

Dressing

2 tbsp extra-virgin olive oil

1 tbsp lemon juice

1 tsp apple cider vinegar

Salt & black pepper, to taste

Optional: ½ tsp Dijon mustard

Optional Toppings

Chopped parsley or cilantro

Crumbled feta cheese (optional)

Seeds or nuts (pumpkin seeds, sunflower seeds, almonds)

Instructions

1️⃣ Prep Veggies

Wash and chop all vegetables.

Place mixed greens in a large bowl, then layer other veggies on top.

2️⃣ Make Dressing

Whisk olive oil, lemon juice, vinegar, salt, pepper, and mustard until emulsified.

3️⃣ Toss & Serve

Pour dressing over salad and toss gently.
