¼ cup toasted almonds, sliced or chopped

1 small cucumber, diced

1 medium carrot, grated or finely diced

2–3 tbsp fresh parsley or mint

For the Citrus Vinaigrette

2 tbsp olive oil

1 tbsp orange juice

1 tbsp lemon juice

1 tsp honey

½ tsp Dijon mustard

Instructions
