Greek Chicken Bake Recipe
Greek Chicken Bake is a flavorful, one-pan dish featuring tender chicken breasts or thighs baked with classic Mediterranean ingredients. The chicken is marinated or seasoned with garlic, lemon, olive oil, and herbs like oregano, then baked alongside cherry tomatoes, Kalamata olives, red onions, and bell peppers. A generous topping of crumbled feta cheese adds a tangy, creamy finish. This dish is vibrant, savory, and easy to prepare, making it perfect for a healthy weeknight meal. Serve it with rice, roasted potatoes, or warm pita bread for a complete Greek-inspired experience
Ingredients:
4 very large boneless, skinless chicken breasts
2 tsp olive oil
2 tsp Greek seasoning (store-bought or homemade)
1/2 cup cherry tomato halves
1/2 cup chopped or sliced Kalamata olives (or black olives if preferred)
1/2 cup sliced Greek peperoncini
3/4 cup crumbled Feta cheese (adjust to taste)
Fresh-ground black pepper to taste
Instructions:
Preheat the oven: Preheat your oven to 400°F (200°C).
Prepare the chicken:
In a large baking dish, drizzle the olive oil over the bottom.
Place the chicken breasts in the baking dish and season both sides with Greek seasoning and fresh-ground black pepper.
Add the toppings:
Scatter the cherry tomato halves, Kalamata olives, and sliced Greek peperoncini evenly over the chicken breasts.
Sprinkle the crumbled Feta cheese over the top of the chicken and vegetables.
Bake:
Cover the baking dish with foil and bake in the preheated oven for about 25-30 minutes.
After this time, remove the foil and continue baking for an additional 10-15 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and the cheese is slightly golden.
Serve:
Remove from the oven and let it rest for a few minutes before serving.
Serve warm, garnished with additional fresh herbs or a squeeze of lemon if desired.
