Ingredients
Greek Chicken
2 boneless chicken breasts or thighs
2 tbsp olive oil
2 cloves garlic, minced
Zest & juice of 1 lemon
1 tsp dried oregano
½ tsp dried thyme
Salt & black pepper
Harvest Vegetables
1 cup cubed sweet potato
1 cup Brussels sprouts, halved
1 red onion, wedges
1 tbsp olive oil
Salt & pepper
Maple Garlic Glaze
3 tbsp pure maple syrup
1 tbsp balsamic vinegar
1 tsp Dijon mustard
1 small garlic clove, finely grated
1 tbsp water
Bowl Base
1½ cups cooked quinoa, farro, or brown rice
Toppings
¼ cup dried cranberries
½ cup crumbled feta cheese
Fresh parsley or dill
Instructions
1. Marinate the Chicken
Mix olive oil, garlic, lemon zest & juice, oregano, thyme, salt, and pepper.
Coat chicken and marinate 15 minutes (or up to overnight).
2. Roast the Vegetables
Preheat oven to 200°C (400°F).
Toss vegetables with olive oil, salt, and pepper.
Roast 25–30 minutes, turning once.
3. Cook the Chicken
Heat a skillet over medium heat.
Sear chicken 5–6 minutes per side until golden and cooked through.
Remove and rest, then slice.
4. Make the Maple Garlic Glaze
Simmer maple syrup, balsamic, Dijon, garlic, and water for 2–3 minutes until slightly thick.
5. Assemble the Bowls
Add grains to bowls.
Top with roasted vegetables and sliced chicken.
Drizzle with maple garlic glaze.
Finish with cranberries, feta, and herbs.
