1 cup cherry tomatoes, halved
1 cucumber, diced
½ small red onion, thinly sliced
½ cup Kalamata olives, halved
½ cup crumbled feta cheese
1 cup mixed greens (romaine, spinach, or arugula)
2 tbsp fresh parsley or dill, chopped
For the Tzatziki Sauce
1 cup plain Greek yogurt
½ cucumber, grated and squeezed of excess water
1 clove garlic, minced
1 tbsp olive oil
1 tbsp lemon juice
1 tbsp fresh dill or mint, chopped

Instructions
1. Marinate the Chicken
In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
Add chicken and coat well. Marinate for at least 30 minutes (up to 4 hours).
2. Cook the Chicken
Heat a grill pan or skillet over medium-high heat.
Cook chicken for 5–6 minutes per side, until golden and cooked through (165°F / 74°C).
Rest 5 minutes, then slice.
3. Make the Tzatziki Sauce
Combine Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, dill/mint, salt, and pepper in a bowl.
Chill until serving.
4. Assemble the Bowls
Divide grains among bowls.
Top with chicken slices, tomatoes, cucumber, onion, olives, greens, and feta.
Drizzle generously with tzatziki sauce.
