3 tbsp olive oil
3 cloves garlic, minced
1 lemon
1 tsp dried oregano
½ tsp ground cumin
½ tsp paprika
Salt & black pepper, to taste
For the Lemon Sauce:
½ cup Greek yogurt
2 tbsp mayonnaise
2 tbsp lemon juice
1 tsp lemon zest
1 clove garlic, finely grated
1 tbsp olive oil
Salt & black pepper, to taste
For the Wraps:
4 Greek pitas or flatbreads
1 cup cucumber, diced
1 cup cherry tomatoes, halved
½ small red onion, thinly sliced
½ cup crumbled feta cheese
Fresh parsley or dill, chopped
Instructions
Marinate the chicken
Mix olive oil, garlic, lemon juice & zest, oregano, cumin, paprika, salt, and pepper in a bowl.
Coat chicken and marinate for at least 30 minutes (up to overnight).
Cook the chicken
Grill or pan-sear over medium-high heat until golden brown and cooked through (165°F / 74°C internal temp).
Rest 5 minutes, then slice into strips.
Make the lemon sauce
In a small bowl, whisk together yogurt, lemon juice & zest, garlic, olive oil, and seasonings. Chill until ready.
