Ingredients
For the Cookies
½ cup olive oil
¼ cup neutral oil (sunflower or vegetable)
½ cup sugar
¼ cup orange juice (fresh)
Zest of 1 orange
1 tsp baking soda
1 tsp cinnamon
¼ tsp ground cloves
Pinch of salt
2½ cups all-purpose flour
For the Honey Syrup
½ cup honey
½ cup water
1 cinnamon stick
1 strip orange peel
Walnut Topping
¾ cup walnuts, finely chopped
½ tsp cinnamon
Instructions
1. Make the Honey Syrup
1. In a saucepan, combine honey, water, cinnamon stick, and orange peel.
2. Bring to a gentle boil and simmer for 5 minutes.
3. Remove from heat and let cool completely.
2. Prepare the Cookie Dough
1. Preheat oven to 350°F (180°C).
2. In a bowl, whisk olive oil, neutral oil, and sugar.
3. Add orange juice, zest, cinnamon, cloves, and salt.
4. Dissolve baking soda in the orange juice (it will foam) and mix in.
5. Gently fold in flour until a soft dough forms (do not overmix).
3. Shape & Bake
1. Shape dough into oval cookies (about 2 tbsp each).
2. Place on a lined baking tray.
3. Bake for 22–25 minutes, until lightly golden.
4. Syrup Soak
1. While cookies are hot, dip them into cool syrup for 10–15 seconds.
2. Remove and place on a rack or plate
5. Finish with Walnuts
