Greek lemon and sweet patatoes bake
This is a twist on the classic Greek lemon potatoes — using sweet potatoes for a slightly caramelized, zesty, savory-sweet flavor bomb. Roasted with garlic, lemon, oregano, and olive oil until crispy on the outside and tender on the inside.
⏱️ Time
Prep time: 10 minutes
Cook time: 35–40 minutes
Total time: ~50 minutes
Ingredients
2 large sweet potatoes, peeled and cut into wedges or thick chunks
3 tbsp olive oil
Juice of 1 lemon (about 2 tbsp)
3 garlic cloves, minced
1 tsp dried oregano
1/2 tsp smoked paprika (optional, for depth)
Salt and black pepper, to taste
1/4 cup vegetable broth or water (to keep them juicy while roasting)
Fresh parsley or dill, for garnish
Optional: crumbled feta or a dollop of Greek yogurt for serving
Instructions
1. Preheat & Prep
Preheat oven to 425°F (220°C).
In a mixing bowl, toss sweet potato wedges with olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
2. Add Broth & Roast
Spread the potatoes out on a baking dish or tray in a single layer.
Pour vegetable broth around the edges — this steams the potatoes as they roast, keeping them moist and flavorful.
3. Roast
Roast for 35–40 minutes, flipping halfway.
They should be golden, slightly crispy, and caramelized on the edges.
4. Serve
Garnish with fresh parsley or dill.
Optional: Add crumbled feta, a squeeze of lemon, or a side of Greek yogurt for creamy contrast.
Notes
Pair with: Greek roasted chicken, lamb skewers, or a big Greek salad.
Want it extra crispy? Broil for the last 2–3 minutes.
You can use regular potatoes too, or mix both for sweet + savory layers.
