4 large pita breads or flatbreads

1 medium zucchini – sliced

1 red bell pepper – sliced

1 small red onion – sliced

1 cup cherry tomatoes – halved

½ cup kalamata olives – pitted & halved

½ cup crumbled feta cheese

2 tbsp olive oil

1 tsp dried oregano

½ tsp salt

¼ tsp black pepper

Fresh parsley or mint – chopped

For the Creamy Dip

1 cup Greek yogurt (plain, full-fat)

2 tbsp tahini

1 tbsp lemon juice

1 garlic clove – minced

1 tbsp olive oil

Salt & black pepper – to taste

Instructions

Step 1: Roast the Vegetables

Preheat oven to 200°C (400°F).

Toss zucchini, bell pepper, and onion with olive oil, oregano, salt, and pepper.

Spread on a baking tray and roast for 18–20 minutes, until tender and slightly caramelized.

Step 2: Make the Creamy Dip

In a bowl, whisk together yogurt, tahini, lemon juice, garlic, and olive oil.

Season with salt and pepper. Adjust with a splash of water if too thick.

Step 3: Assemble the Wraps

Warm the pita/flatbreads lightly on a pan.

Spread 2–3 tbsp of creamy dip on each bread.

Layer with roasted veggies, cherry tomatoes, olives, and feta.

Sprinkle fresh parsley or mint.

Fold/wrap tightly and serve immediately.
