Greek Peas and Potato Stew
A comforting, rustic Greek vegan stew made with green peas, tender potatoes, carrots, onion, dill, and rich tomato olive oil sauce. It’s a popular Ladera dish (vegetables cooked in olive oil) – perfect with crusty bread or feta on the side.

Ingredients:
1/4 cup (60 ml) extra virgin olive oil
1 large onion, finely chopped
2 cloves garlic, minced
2 medium carrots, sliced
3 medium potatoes, peeled and diced
2 cups frozen or fresh green peas
1 can (400g) crushed tomatoes or 2 fresh ripe tomatoes, grated
1½ cups water or vegetable broth
1 tsp salt, or to taste
¼ tsp black pepper
1 tsp sweet paprika (optional)
1–2 tbsp fresh dill, chopped (or 1 tsp dried)
Juice of ½ lemon (optional, for serving)
Instructions:
1. Sauté aromatics:
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent (about 5 minutes). Stir in garlic and cook for another 1 minute.
3. Tomatoes + spices:
Stir in crushed tomatoes, salt, pepper, and paprika (if using). Cook for 2–3 minutes until tomatoes reduce slightly
4. Simmer stew:
Pour in the water or broth, and bring to a boil. Lower the heat, cover, and simmer for about 15–18 minutes, or until potatoes are tender.
5. Add peas and dill:
Stir in the peas and dill. Simmer uncovered for another 10–12 minutes, until peas are soft and stew thickens slightly.
6. Final touch:
Taste and adjust seasoning. Remove from heat and let it rest for 10 minutes before serving. Drizzle with lemon juice if desired.

Serve warm with crusty bread, feta cheese, and olives on the side.
