Ingredients:

1/4 cup (60 ml) extra virgin olive oil

1 large onion, finely chopped

2 cloves garlic, minced

2 medium carrots, sliced

3 medium potatoes, peeled and diced

2 cups frozen or fresh green peas

1 can (400g) crushed tomatoes or 2 fresh ripe tomatoes, grated

1½ cups water or vegetable broth

1 tsp salt, or to taste

¼ tsp black pepper

1 tsp sweet paprika (optional)

1–2 tbsp fresh dill, chopped (or 1 tsp dried)

Juice of ½ lemon (optional, for serving)

Instructions:

1. Sauté aromatics:

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent (about 5 minutes). Stir in garlic and cook for another 1 minute.

3. Tomatoes + spices:

Stir in crushed tomatoes, salt, pepper, and paprika (if using). Cook for 2–3 minutes until tomatoes reduce slightly

4. Simmer stew:

Pour in the water or broth, and bring to a boil. Lower the heat, cover, and simmer for about 15–18 minutes, or until potatoes are tender.

5. Add peas and dill:

Stir in the peas and dill. Simmer uncovered for another 10–12 minutes, until peas are soft and stew thickens slightly.

6. Final touch:

Taste and adjust seasoning. Remove from heat and let it rest for 10 minutes before serving. Drizzle with lemon juice if desired.
