Greek Salad Bowl with Feta
Ingredients:
2 cups chopped romaine lettuce or mixed greens
1 cup cherry tomatoes, halvedl
1 cucumber, diced
1/2 red onion, thinly sliced
1/2 cup Kalamata olives, pitted
1/2 green bell pepper, diced (optional)
1/2 cup crumbled feta cheese
1 tbsp fresh oregano (or 1 tsp dried)
2 tbsp extra virgin olive oil
1 tbsp red wine vinegar or lemon juice
Salt and pepper, to taste
Instructions:
In a large bowl, combine the chopped lettuce, tomatoes, cucumber, red onion, olives, and green pepper if using.
Sprinkle the crumbled feta and oregano over the top.
In a small bowl or jar, whisk together the olive oil, red wine vinegar (or lemon juice), salt, and pepper.
Drizzle the dressing over the salad and toss gently to combine everything.
Serve immediately and enjoy
