Ingredients
For the Salad:
8 oz spaghetti (or other pasta like linguine or rotini)
1 cup cherry tomatoes, halved
1 cup cucumber, diced
½ cup red bell pepper, diced
¼ cup red onion, thinly sliced
½ cup Kalamata olives, sliced
½ cup feta cheese, crumbled
¼ cup fresh parsley, chopped
For the Greek Dressing:
¼ cup olive oil
2 tablespoons red wine vinegar
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 teaspoon dried oregano
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
Instructions
1. Cook the Spaghetti:
Bring a large pot of salted water to a boil.
Cook spaghetti according to package instructions until al dente.
Drain and rinse under cold water to cool, then transfer to a large bowl.
2. Make the Dressing:
In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, oregano, garlic powder, salt, and black pepper.
3. Assemble the Salad:
