Ingredients:

  1. 1/4 cup olive oil
  2.  1 large onion, chopped
  3.  2 cloves garlic, minced
  4.  1 pound fresh spinach, chopped
  5.  1/2 cup fresh parsley, chopped
  6.  1/2 cup feta cheese, crumbled
  7.  1/2 cup ricotta cheese
  8.  1/2 cup grated Parmesan cheese
  9.  1/4 teaspoon nutmeg
  10.  Salt and pepper to taste
  11.  1 packag* e phyllo dough sheets

Instructions:

1. In a pan, heat olive oil and sauté the onion until translucent.
2. Add garlic and cook for another minute.
3. Add the chopped spinach and cook until wilted.
4. Remove from heat and let it cool.
5. In a bowl, combine the spinach mixture with parsley, feta cheese, ricotta cheese, Parmesan cheese, nutmeg, salt, and pepper
6. Mix well.
7. Preheat the oven to 350°F (175°C).
8. Brush a baking dish with oil.
9. Layer phyllo dough sheets in the dish, brushing each sheet with Oil.
10. Add the spinach filling on top.
11. Continue layering phyllo dough sheets on top of the filling, brushing each sheet with butter.
12. Finish by folding any excess dough over the top.
13. Brush the top with butter.
14. Bake in the preheated oven for about 45-50 minutes or until golden brown and crispy.
15. Let it cool slightly before slicing and serving.
