1 egg

Instructions
1. Make the Meatballs:
In a large bowl, mix all meatball ingredients (except olive oil) until well combined.
Roll into 1.5-inch balls (makes about 16–18 meatballs).
2. Brown the Meatballs:
Heat 1 tbsp olive oil in a large skillet over medium heat.
Add meatballs in batches and brown on all sides (about 5–6 minutes total).
Remove and set aside (they don’t need to be fully cooked yet).
3. Make the Sauce:
In the same skillet, add a bit more olive oil if needed. Sauté garlic for 30 seconds.
Add tomatoes, oregano, olives, lemon juice, and a pinch of salt and pepper.
Bring to a simmer and cook for 5 minutes.
4. Simmer Meatballs:
Return browned meatballs to the skillet.
Cover and simmer on low for 10–12 minutes until meatballs are fully cooked and tender.
