Greek Zucchini & Feta Salad
Ingredients:
- 2 medium zucchinis, spiralized
- 1 large cucumber, spiralized
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 2 tbsp extra-virgin olive oil
- 1 tbsp lemon juice
- 1/2 tsp dried oregano
- Salt and pepper to taste
Directions:
- Start by spiralizing the zucchini and cucumber into thin noodles. Place them in a large mixing bowl.
- Add the halved cherry tomatoes, sliced olives, and red onion ribbons to the bowl with the spiralized vegetables
- In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
- Drizzle the dressing over the salad ingredients and toss gently to coat everything evenly.
- Sprinkle the crumbled feta cheese on top of the salad for a deliciously creamy finish.
- Serve immediately and enjoy the fresh flavors!
