Greek Zucchini & Feta Salad

Ingredients:

  1. 2 medium zucchinis, spiralized
  2. 1 large cucumber, spiralized
  3. 1 cup cherry tomatoes, halved
  4. 1/2 cup Kalamata olives, pitted and sliced
  5. 1/4 red onion, thinly sliced
  6. 1/2 cup crumbled feta cheese
  7. 2 tbsp extra-virgin olive oil
  8. 1 tbsp lemon juice
  9. 1/2 tsp dried oregano
  10. Salt and pepper to taste

Directions:

  1. Start by spiralizing the zucchini and cucumber into thin noodles. Place them in a large mixing bowl.
  2. Add the halved cherry tomatoes, sliced olives, and red onion ribbons to the bowl with the spiralized vegetables
  3. In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
  4. Drizzle the dressing over the salad ingredients and toss gently to coat everything evenly.
  5. Sprinkle the crumbled feta cheese on top of the salad for a deliciously creamy finish.
  6. Serve immediately and enjoy the fresh flavors!
