Green Bean & Tomato Salad

Ingredients:

  1. 1 lb fresh green beans, trimmed
  2. 1 cup cherry tomatoes, halved
  3. 1/4 cup fresh basil leaves, chopped
  4. 2 tbsp fresh parsley, chopped
  5. 2 tbsp olive oil
  6. 1 tbsp balsamic vinegar
  7. 1 clove garlic, minced
  8. Salt and pepper, to taste

Optional: 2 tbsp crumbled feta or goat cheese for topping

Instructions

1. Blanch the Green Beans: Bring a pot of salted water to a boil. Add the green beans and cook for 3–4 minutes until crisp-tender. Drain and transfer them to an ice bath to stop the cooking, then drain again.

2. Prepare the Dressing: In a small bowl, whisk together olive oil, balsamic vinegar, garlic, salt, and pepper.

3. Combine Ingredients: In a large bowl, mix the green beans, cherry tomatoes, basil, and parsley. Drizzle the dressing over the top and toss gently.

4. Serve: Transfer to a serving dish and top with crumbled cheese if desired. Serve chilled or at room temperature.
