Ingredients

For the Mashed Potatoes

1 kg (2.2 lbs) potatoes (Yukon gold or Russet), peeled and cubed

4 tbsp olive oil

½ cup milk or cream

Salt & pepper, to taste

For the Green Goddess Herb Blend

½ cup fresh parsley

½ cup fresh cilantro or basil

¼ cup chives or green onions

2 tbsp fresh dill

2 cloves garlic

2 tbsp olive oil

1 tbsp lemon juice

1 tbsp Greek yogurt OR sour cream

Salt & pepper, to taste

Instructions

1. Cook the Potatoes

Place potato cubes in a pot of cold salted water.

Bring to a boil and cook 15–20 minutes until fork-tender.

Drain and return to the pot.

2. Make the Green Goddess Herb Mixture

In a blender or food processor, combine:

Parsley

Cilantro or basil

Chives

Dill

Garlic

Olive oil

Lemon juice

Greek yogurt or sour cream

Pinch of salt and pepper

Blend into a smooth green paste.

3. Mash the Potatoes

Add butter and warm milk/cream to the potatoes.

Mash until smooth and fluffy.

4. Combine

Add the Green Goddess paste to the mashed potatoes.

Stir until fully combined and a beautiful green color.

Taste and adjust salt, pepper, or lemon.
