Grilled Chicken Skewers with Honey Mustard Drizzle
Ingredients:
For the Chicken Marinade:
1.5 lbs boneless, skinless chicken thighs (or breast), cut into bite-sized pieces
2 tbsp olive oil
1 tbsp soy sauce
1 tbsp Dijon mustard
1 tbsp honey
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
For the Honey Mustard Drizzle:
2 tbsp Dijon mustard
1 tbsp honey
1 tbsp mayonnaise
1/2 tsp lemon juice
1/4 tsp cayenne pepper (optional, for spice)
For Garnish:
- 2 tbsp chopped green onions
Instructions:
Marinate the Chicken:
In a bowl, mix olive oil, soy sauce, mustard, honey, paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken pieces, tossing to coat. Cover and let marinate for at least 30 minutes (or overnight for deeper flavor).
Prepare the Skewers:
If using wooden skewers, soak them in water for 20-30 minutes to prevent burning. Thread the marinated chicken pieces onto the skewers.
Cook the Chicken:
Grill Method: Preheat the grill to medium-high heat. Cook for about 4-5 minutes per side until the chicken is charred and cooked through.
Air Fryer Method: Preheat to 400°F (200°C). Air fry for 12-15 minutes, flipping halfway.
Stovetop Method: Heat a grill pan over medium-high heat and cook for 4-5 minutes per side.
Make the Honey Mustard Drizzle:
In a small bowl, whisk together Dijon mustard, honey, mayonnaise, lemon juice, and cayenne pepper until smooth.
Assemble & Serve:
Drizzle the honey mustard sauce over the skewers and garnish with chopped green onions. Serve hot!
