Grilled Corn Rings with Garlic & Herbs
Fresh corn sliced into rings, grilled until lightly charred, then tossed in garlic-infused olive butter, fresh herbs, and a squeeze of lemon. Crispy edges, juicy centers, and incredible aroma — perfect for BBQs or as a stylish side dish.

Ingredients
4 ears fresh corn, husked
3 tbsp olive oil
2 tbsp butter, melted
3 cloves garlic, finely minced
1 tbsp fresh parsley, chopped
1 tbsp fresh thyme or oregano, chopped
Zest of ½ lemon
Salt & black pepper to taste
Optional Finish
Grated Parmesan or crumbled feta

Instructions
1. Prepare the Corn
Carefully cut each corn cob into 2–3 cm thick rings.
Brush lightly with olive oil and season with salt.
2. Grill
Heat grill or grill pan to medium-high.
Grill corn rings 3–4 minutes per side, turning carefully, until charred and tender.
3. Garlic-Herb Butter
In a small bowl, mix melted butter, garlic, parsley, thyme, lemon zest, salt & pepper.
4. Finish
Toss hot corn rings with garlic-herb butter.
Sprinkle cheese if using and squeeze fresh lemon on top.
Notes
Use very fresh corn for the sweetest flavor.
Cut carefully — a sharp knife and stable surface are important.
Grill baskets also work well for easier turning.
Tips
No grill? Roast at 220°C (425°F) for 20 minutes, flipping once.
Add a drizzle of honey-lemon butter for a sweet finish.
